Shiitake Mushroom Vegetarian Bean Soup

You can make this soup in a slow cooker or on the stove.

Suggestions: add fresh asparagus, garlic, portobello mushrooms and sausage (for your meat lovers.)

Ingredients: Shiitake broth, lentils, various beans, onion, garlic and parsley. Makes 8 servings.
